Did you know that Pinto beans are a great source of fiber and iron?

Yes, they are! 

And here at home, we love our Pinto beans....because not only are they good for you, but there are simple and easy ways to prepare them that are really delicious....and here's a very easy recipe for you....I know you're going to love this one!

RICE N' REFRIED BEANS

INGREDIENTS:

  •  1/2 - cup instant brown rice
  •  1 - can (cooked and mashed) Pinto beans (also called ReFried Beans)
  •  1/2 - avocado, sliced
  •  1/4 - small red onion, diced
  •  1 - small tomato, diced

DIRECTIONS:

Cook instant brown rice as directed on the package, and while that's cooking, place Pinto beans in a saucepan and warm on medium heat, stirring often (be careful not to scorch them).

When the rice is done, and the Pinto beans are steamy hot, place a serving of each side by side on a plate.  Sprinkle the Pinto beans with red onion dices and tomato dices, and place avocado slices around the rice.

If you want to add a little spice to this recipe, have a jar of salsa handy, and use freely.....this will give it an authentic south of the border flavor and mixes well with the rice and beans.
