I can't believe how crazy the weather's been around here!

We've had two days of very dense fog with our high's in the 70's. And now, after a cold front just moved through dumping a whole lot of rain on us, the thermometer is on it's way down....and I mean WAY down.... and will drop us into the mid 30's later on tonight.

This isn't supposed to happen like this here in sunny Florida.  We are afterall, the warm Sunshine State.

I know you might be experiencing strange changes in climate patterns too, where you are, because it seems to be happening everywhere to one degree or another... (no pun intended).... And I'd love to hear back from you on that. And when the weather changes, we change right along with it.  When it gets too hot, we feel it, and that can have an adverse affect on MS symptoms.  And when it gets too cold, that can bring on unwanted symptoms as well.

So, I thought it was time to break out another healthy and delicious recipe to act as some comfort food for you.  And I know you're go enjoy this one a lot!

This is a saucy one-skillet chicken dish that's full of tomatoes, spinach, olives and capers.  And you can serve it by itself, or over egg noodles with a mixed green salad on the side.

It may not convince Mother Nature to stop behaving badly, but this easy to fix recipe sure might make you feel better while you're watching the weather report!



  • 1 14 - ounce can petite diced tomatoes with garlic and olive oil (or other Italian-style seasoning)
  • 1 1/2 - cups frozen chopped spinach, thawed
  • 1/3 - cup halved Sicilian or other green olives
  • 1 - tablespoon capers, rinsed
  • 1/4 - teaspoon crushed red pepper, or to taste
  • 4 - 4-ounce chicken cutlets
  • 1/4 - teaspoon freshly ground pepper
  • 1 - tablespoon extra-virgin olive oil


Combine tomatoes, spinach, olives, capers and crushed red pepper in a bowl.

Sprinkle both sides of chicken with pepper.

Heat oil in a large skillet over medium-high heat.

Cook the chicken until browned on one side, 2 to 4 minutes.

Turn it over; top with the tomato mixture.

Reduce heat to medium, cover and cook until cooked through, 3 to 5 minutes.

Here's a Tip:   If you can't find chicken cutlets for this recipe, you can make your own. Purchase four 5-ounce chicken breasts. Trim off the fat. Place the chicken between two pieces of plastic wrap, and pound with a rolling pin, meat mallet or heavy skillet until flattened to about 1/2 inch thick. It's not hard to do, and it's well worth the effort.
