New Twist On An Old Favorite.... 10 April 2015

Here's an old favorite with a new flavor twist that'll make your tastebuds very, very happy.

I don't know anybody who doesn't like Egg Salad.  This was always a staple recipe when I was growing up, and it still is today at our house.  We love this!

With the cost of food on the rise everywhere, this is not only an economical recipe, but healthy and delicious, too.

It's one of my all-time favorites, and I know you're going to enjoy this!



  • 6 - tablespoons of mayonnaise
  • 2 - teaspoons mustard
  • 1/4 - teaspoon black pepper
  • 1/8 - teaspoon salt
  • 8 - hard boiled eggs
  • 1/2 - cup thinly sliced celery
  • 1/4 - cup chopped sweet pickles (or use sweet pickle relish)
  • 3 - tablespoons chopped sweet onion


Combine mayonnaise, mustard, pepper and salt in a medium sized bowl.

Cut the eggs in half and discard 4 of the yolks (or save them for another use.) Add the whites and remaining 4 yolks into the bowl and mash up to desired consistency.  Gently stir in the celery, chopped pickles (or pickle relish) and onion.

Serve on a bed of fresh, crisp lettuce, or make a sandwich .....(it's so good on pumpernickel bread!)


To hard boil the eggs, place eggs in a single layer in a saucepan, and cover with water.  Bring to a simmer over medium-high heat.  Reduct heat to low and cook for 15 minutes.  Remove from heat and pour out hot water and cover eggs with ice-cold water.  Let stand until cool enough to handle before peeling
