It's An Easy Tradition.... 22 April 2015

There are so many different ways to create a great recipe, but it's important to remember that the ingredients in those recipes need to be good and healthy for us.... and not just taste good.

Well....this traditional Tuscan herbs and spices recipe is not only delicious but it's healthy and nutritious, too!   And the flavorful sauce doesn't hurt either.  It's so easy to make, and takes very little time.  I know you're going to love this!

TUSCAN GARLIC CHICKEN

INGREDIENTS

  • 2  - Tablespoons olive oil
  • 6 -  boneless skinless chicken thighs (1-1/2 lb.)
  • 1-1/2 lb. - small red potatoes (about 9), cut in half
  • 4 - cloves garlic, minced
  • 1/2 - teaspoon minced fresh rosemary (dried is OK)
  • 1/2 - teaspoon dried oregano leaves
  • 1-1/4 - cups chicken broth
  • 1/4 - cup Italian Dressing
  • 1 - cup  frozen peas
  • 1/4 - cup   Parmesan Cheese  (optional)

DIRECTIONS

Heat 1 tablespoon of oil in a large non-stick skillet over medium-high heat. Add the chicken and cook 3 minutes on each side or until thighs are evenly browned on both sides. Transfer to a plate and cover to keep them warm.

Add the remaining oil and place potatoes, cut sides down on the skillet and cook over medium-heat  for 7 minutes on each side or until potatoes are golden brown.  Then stir in the garlic, rosemary and oregano for the last minute of cooking.

Add the broth and Italian dressing and stir to scrape any browned bits from bottom of the skillet. Bring to a boil and cover.

Simmer over medium-low heat for 10 minutes, stirring occasionally. Return chicken to skillet and simmer for 5 minutes or until potatoes are tender and chicken is done.

Transfer chicken and potatoes to platter with a slotted spoon, keeping the liquid in the skillet; cover chicken and potatoes to keep warm.

Bring liquid in the skillet to a boil over medium-high heat and cook for 5 to 7 minutes, or until the liquid is reduced to about 3/4 cup. Next, stir in the peas and cook 1 minute or until they're heated through, stirring occasionally. Then spoon over the chicken and potatoes.  (optional: sprinkle with cheese).
