Something Special.... 17 August 2015

Here we are in the middle of the hottest summer weather on record, and temperatures just keep rising. 

Triple digits are commonplace, and are now being reported all over the country (and the rest of the world, too) , and so far, there's no relief in sight. 

The heat is SO intense outside that it just drains your strength and energy, doesn't it?!

So who feels like cooking when it's this hot?  Well, here's a great alternative for you that doesn't require standing over a hot stove.

If you're dreaming about something really delicious, yet simple and very easy to fix, then  this recipe is just what you're looking for.  Make it for lunch or supper.  It's a sure winner you're going to love, and it's chock full of nutritious ingredients that may be lacking in your normal daily diet routine.

I make this often, and my family loves it!

SUE ELLEN'S DELUXE SUMMER SALAD

Here's what you'll need to create this delicious salad....

Start with 1/2  bunch of fresh Romaine lettuce (about 5-6 full leaves) and 2 cups fresh Spinach (make sure it's all been well rinsed)

2 - hard boiled eggs peeled and quartered.  Remove the yolks.  (I give the yolks to my dog Winnie...she loves them!)

1 - handful of thinly sliced carrot sticks

3 - large red radishes thinly sliced

1/2 - crisp cucumber peeled and thinly sliced

1/2 - fresh green pepper vertically sliced into thin bite-size strips

1 - red ripe tomato sliced

3 - thin slices of red onion (or sweet onion if you prefer)

1 - handful chopped walnuts (or, I sometimes use pecans)

2 - cups small salad shrimp cooked.  (You can substitute diced cooked chicken instead....best to use white meat)

Now let's put it all together!

Make sure your greens are dry after rinsing.  Cut away any tough veins (stems) and tear the Romaine leaves into bite size pieces and place in a large salad bowl.  Pinch off the stems of the Spinach, and tear that into bite size pieces, and place into salad bowl along with the Romaine.  Add radishes, cucumber, green pepper, tomatoe, onion and shrimp (or chicken) and lightly toss. 

Gradually add your favorite salad dressing. ( I prefer using a mild herbs and spices salad dressing, because it brings out all the mixed flavors so much better).  Gently toss it all together until salad dressing evenly coats all ingredients.

 Serve on large salad plates.  Add hard boiled egg whites to one side of the salad.  Place a large 'pinch' of thin carrott sticks directly on top of the salad, and then for the final touch....add 1/2 handful of chopped walnuts on top of the carrott sticks.  You will love the way this looks on your salad plate.  It's as a full meal.....mmmmm....absolutely delicious!  Serves two
